3 large eggs, beaten
1 c. vegetable oil
1 c. granulated sugar
3 tsp. vanilla
2 c. shredded zucchini
3 c. flour
1 tsp. baking soda
¼ tsp. baking powder
3 tsp. cinnamon
¾ tsp. nutmeg
1 c. chopped nuts, optional
½ c. raisins, optional


  1. Preheat oven to 350 degrees. Grease two 9-by-5-inch loaf pans.
  2. Beat together eggs, vegetable oil, sugar and vanilla. Fold in zucchini.
  3. Sift together flour, baking soda, baking powder, cinnamon and nutmeg.
  4. Fold in zucchini mixture, nuts and raising. Divide between prepared pans.
  5. Bake 1 hour or until wooden pick inserted in center comes out clean. Remove from pans; cool.
