    Hy-Vee salt
    Hy-Vee ground black pepper
    2 c. fresh arugula, and/or spinach
    3 oz. Hy-Vee canned albacore tuna
    1 Hy-Vee Short Cuts hard-boiled egg, sliced
    ½ c. farro, cooked
    2 oz. asparagus spears, trimmed and cooked
    ¼ c. red bell pepper, seeded and chopped
    ¼ c. edamame, cooked and shelled
    ½ tomato, cut into wedges

    Directions

    1. In a small bowl, whisk together olive oil and white wine vinegar. Season with salt and pepper.

    2. Line a dinner plate with arugula and/or spinach. Top with tuna, sliced hard-boiled egg, cooked farro, cooked asparagus, red bell pepper, edamame, and tomato. Dress white wine vinegar vinaigrette.
