Tropical Winter Chicken Salad
Servings and Ingredients
|1||(15 oz) can Hy-Vee peaches in juice, drained and diced|
|1||(14.5 oz) can Hy-Vee no-salt-added diced tomatoes, drained|
|Juice of 1 lime|
|1||small red bell pepper, seeded and diced|
|¼||medium red onion, finely diced|
|1||(12.5 oz) can Hy-Vee chunk chicken breast|
|Salt and pepper, to taste|
|2 c.||Hy-Vee spring salad mix, divided|
|4||Hy-Vee corn tortillas|
|¼ c.||finely chopped cilantro, divided|
- In a bowl, combine peaches, tomatoes, lime juice, bell pepper and red onion.
- In a separate bowl, season chicken breast with salt and pepper to taste.
- To assemble, place 1/2 cup of the spring mix on a tortilla and top with 1/4 of the chicken. Add 1/4 of the vegetable mixture and sprinkle with 1 tablespoon of chopped cilantro.
- Repeat with each remaining tortilla. Serve immediately.
