    1 (15 oz) can Hy-Vee peaches in juice, drained and diced
    1 (14.5 oz) can Hy-Vee no-salt-added diced tomatoes, drained
    Juice of 1 lime
    1 small red bell pepper, seeded and diced
    ¼ medium red onion, finely diced
    1 (12.5 oz) can Hy-Vee chunk chicken breast
    Salt and pepper, to taste
    2 c. Hy-Vee spring salad mix, divided
    4 Hy-Vee corn tortillas
    ¼ c. finely chopped cilantro, divided


    1. In a bowl, combine peaches, tomatoes, lime juice, bell pepper and red onion.
    2. In a separate bowl, season chicken breast with salt and pepper to taste.
    3. To assemble, place 1/2 cup of the spring mix on a tortilla and top with 1/4 of the chicken. Add 1/4 of the vegetable mixture and sprinkle with 1 tablespoon of chopped cilantro.
    4. Repeat with each remaining tortilla. Serve immediately.
