Servings and Ingredients

Serves 10
3 c. chopped fresh mango (about 3 medium)
¼ c. mango nectar
2 ¼ c. sliced Basket & Bushel strawberries, divided
2 tbsp. Hy-Vee honey
1 tsp. Sriracha
1 (3.3-oz.) pkg. toasted coconut chips, lightly crushed; for garnish
1 (10-oz.) pkg. white vanilla-flavored melting wafers, for garnish
Tajín clásico seasoning, for garnish

Things To Grab

  • Blender or food processor
  • Small bowl
  • 10 (3-oz.) pop molds with lid
  • Small knife
  • 10 craft sticks
  • Baking sheet
  • Parchment paper
  • Small plate
  • Microwave-safe bowl
  • Plastic wrap

  1. Place chopped mango and mango nectar in a blender or food processor. Cover and blend or process until smooth. Transfer to a small bowl; set aside.

  2. Rinse blender or food processor container. Place 1¼ cups strawberries, honey, lemon juice, and Sriracha in blender or food processor. Cover and blend or process until smooth.

  3. Alternate layers of mango and strawberry mixtures in 10 (3-oz.) pop molds. Use a knife or craft stick to swirl the mixtures to create a marble effect. Place the remaining 1 cup strawberry slices along edges of pop molds. Cover with lid. Insert craft sticks. Freeze for 4 hours or until firm.

  4. Just before unmolding paletas, line a baking sheet with parchment paper; set aside. To garnish, place coconut chips on a plate and melt white melting wafers according to pkg. directions; set aside.

  5. Dip the molds into cool water until paletas loosen from molds. Dip one side of paletas into the melted wafers to coat with a thin layer, then gently press into coconut chips. Place, dipped side down, on prepared baking sheet. Sprinkle the other side of paletas with Tajín seasoning, if desired. Lightly cover with plastic wrap and store in freezer until ready to serve.
