2 tbsp. Gustare Vita olive oil
4 c. fresh arugula
3 c. Hy-Vee butter lettuce
2 c. Hy-Vee Short Cuts strawberries, sliced
1 c. Hy-Vee Short Cuts grapes, red and/or green, halved
1 c. radishes, sliced
2 oz. Soiree goat cheese, crumbled
½ c. caramelized pecans

Directions

  1. For vinaigrette, whisk together white wine vinegar, strawberry preserves, salt, and black pepper. Slowly add olive oil, whisking continuously; set aside.

  2. Toss together arugula, butter lettuce, strawberries, grapes, and radishes in a large bowl. Add half of vinaigrette; toss until coated. Top with crumbled goat cheese and caramelized pecans. Drizzle with remaining vinaigrette.
