|½ c. prepared pesto, sriracha or Italian vinaigrette, plus extra for serving|

In a large bowl, toss scallops or shrimp with olive oil. Thread scallops or shrimp onto 6 skewers. Season with salt.

Grill skewers on a well-greased rack for 6 minutes or until scallops or shrimp turn white and firm and grill marks form, turning once. Brush seafood several times with pesto, sriracha, or vinaigrette during final minute on the grill.
To serve, place skewers on a platter and drizzle with additional pesto, sriracha or vinaigrette, if desired.
