When preparing scallops, remember to remove the adductor muscle from the scallop. It's found along the side of the scallop, is crescent shaped, and peels off easily.
Servings and Ingredients
|2 tbsp. Hy-Vee Select red wine vinegar|
|2 tbsp. Hy-Vee Select olive oil|
|2 tbsp. chopped fresh basil|
|Hy-Vee black pepper, to taste|
|12 medium scallops|
|12 thin slices prosciutto|
- Preheat oven to 350 degrees.
- In a bowl, stir together vinegar, oil, basil and black pepper. Add scallops and toss gently to coat. Let marinate at room temperature 15 minutes.
- Meanwhile, fold each slice of prosciutto in half lengthwise, then wrap each scallop in 1 slice prosciutto. Place wrapped scallops in a buttered baking dish, seam-side down.
- Bake 15 minutes or until scallops are cooked through.
