    Description

    Make an easy balsamic reduction by gently simmering balsamic vinegar until the volume reduces by half. Then remove it from the heat and stir in sugar or honey. Also try this same reduction drizzled over fresh mozzarella or salads.

    1 c. Hy-Vee Select balsamic vinegar
    2 tbsp. packed Hy-Vee brown sugar
    1 lbs. split chicken breasts
    Feta cheese crumbles, diced tomatoes and fresh basil, for garnish

    Directions

    1. Bring balsamic vinegar to a simmer in a medium saucepan over medium-high heat. Reduce heat to low maintain a gentle simmer for 10 to 15 minutes or until thickened and reduced by half. Remove from heat and stir in brown sugar; set aside.
    2. Meanwhile, heat a charcoal or gas grill for direct cooking over medium-high heat. Grill chicken about 15 minutes, flipping halfway, or until internal temperature reaches 165 degrees.
    3. Drizzle balsamic syrup over grilled chicken. Garnish with feta crumbles, diced tomato, and basil leaves if desired.
