    Serves 7
    1 c. brown or white rice
    ¼ c. soy grits*
    2 ½ c. water
    ½ tsp. salt, optional


    1. Combine all ingredients in medium saucepan. Be sure it's large enough as soy grits foam a little.
    2. Bring to a boil. Reduce heat as low as possible, cover tightly and let cook for 45 minutes, 20 minutes if using white rice. Do NOT lift the lid while rice is cooking!
    3. Remove pan from heat. Allow to sit, covered, for 10 minutes before serving.
    4. *Most soy grits are small flakes. If you have large chunks, use brown rice and 2-3/4 cups water to cook grits completely.
