Description

Frozen pina coladas you can make ahead of time! Just blend and freeze in a plastic bag. The alcohol will keep the drink from freezing completely so you'll have a frozen cocktail that's ready when you are!

5 ½ oz. Hy-Vee light canned coconut milk
4 oz. Captain Morgan light spiced rum
2 oz. simple syrup
Desired garnishes, such as fresh pineapple, lime wedges, and fresh mint

Directions

  1. Combine pineapple, coconut milk, rum, and simple syrup in a blender. Cover; blend until smooth. Divide mixture among four Simply Done zip-close snack bags. Seal and freeze at least 4 hours. 

  2. When ready to serve, let stand at room temperature 10 minutes. Pour each bag into an 8-oz. cocktail glass. Serve with skewered pineapple and lime wedges. Garnish with fresh mint, if desired.
