    2 tsp. Hy-Vee canola oil
    1 lbs. ground chicken
    3 cloves garlic, minced
    1 c. finely chopped oyster and/or shiitake mushrooms
    ½ c. finely chopped canned Hy-Vee water chestnuts
    ¼ c. finely chopped green onions
    3 tbsp. Hy-Vee lite soy sauce
    3 tbsp. packed Hy-Vee brown sugar
    ¾ tsp. rice wine vinegar
    12 lettuce leaves, such as baby, Boston or Bibb
    Sweet Soy Dipping Sauce or Hoisin Dipping Sauce, for serving

    Directions

    1. Heat oil in a large skillet over medium-high heat. Cook chicken and garlic until chicken is brown. Stir in mushrooms, water chestnuts and green onions; cook 2 minutes more.
    2. Combine soy sauce, brown sugar and vinegar; add to skillet. Cook and stir for 2 minutes.
    3. Fill each lettuce leaf with about 1/3 cup chicken mixture. Serve with Sweet Soy Dipping Sauce or Hoisin Dipping Sauce.
