    2 tbsp.Hy-Vee Select red wine vinegar
    1 tsp.coarse ground mustard
    1 tsp.Hy-Vee honey
    ¼ tsp.Hy-Vee salt
    3green onions
    1(6 oz) bag baby spinach
    2celery, sliced thinly diagonally
    6 slice(s)Hy-Vee smoked, thick-sliced bacon, cooked, drained and crumbled
    1tart red apple, cored and cut into chunks
    2 oz.crumbled blue cheese

    Directions

    1. Just before serving, add bacon, apple and blue cheese. Toss with dressing.
    2. For dressing, whisk together olive oil, vinegar, mustard, honey and salt. Thinly slice white portion of green onions and stir into dressing.
    3. Thinly slice green portion of green onion; set aside.
    4. In a large bowl toss baby spinach, reserved sliced green onion and celery.
