Dietitian Tip: Orzo is a short-cut pasta but looks like long-grain rice.

1 ½ c. (8 oz) uncooked orzo | ||
1 tbsp. Hy-Vee Select olive oil | ||
1 c. chopped red onion | ||
2 clove(s) garlic, minced | ||
2 c. arugula leaves | ||
3 tbsp. Hy-Vee balsamic vinaigrette | ||
Hy-Vee salt and Hy-Vee black pepper, to taste |
Directions
- Prepare orzo in water according to package directions; drain but do not rinse.
- Meanwhile, in a large skillet heat oil over medium heat. Add onion and cook for 3 minutes or until softened, stirring constantly. Add garlic and cook 1 minute more. Remove from heat.
- Stir in orzo, arugula and vinaigrette. Season to taste to salt and pepper.
