Low acid foods like green beans, potatoes, soups and even some salsas require pressure canning. Cindy Evans and Lisa Martin, County Extension Agents with K-State Research & Extension in Shawnee County, will cover all you need to know including equipment selection and use, altitude adjustment and techniques to achieve a safely canned product.
