Chipotle Fries

Serves 4.

All you need:

1 pound russet potatoes
2 tbsp Hy-Vee butter, melted
1 tbsp Hy-Vee Select olive oil
2 cloves garlic, minced
1 tsp chipotle powder
1 tsp lime zest
1 1/2 tsp kosher salt

All you do:

Preheat grill for direct cooking to medium heat.
Scrub potatoes thoroughly with a brush; pat dry. Cut potatoes lengthwise into wedges. In a medium bowl, combine butter, olive oil, garlic, chipotle powder, lime zest and salt; toss potatoes in chipotle-butter mixture.
Line grill rack with a piece of foil sprayed with non-stick cooking spray. Using a fork, prick foil in several places. Place potato fries on foil. Grill for 40 minutes or until tender, turning occasionally.
