    2 c. sliced unpeeled zucchini
    2 (2.5 oz each) pkg lean pastrami
    1 (15 oz) can chunky tomato sauce
    1 ½ tsp. Italian seasoning
    ¼ c. grated reduced-fat Parmesan cheese
    2 c. hot cooked rotini pasta, rinsed and drained

    Directions

    1. In a large skillet sprayed with olive oil-flavored cooking spray, saute zucchini and pastrami for 5 minutes or until lightly browned.
    2. Add tomato sauce and Italian seasoning. Mix well to combine.
    3. Stir in Parmesan cheese and rotini pasta. Reduce heat. Simmer 10 minutes or until mixture is heated through, stirring occasionally.
