Servings and Ingredients
|2 c. sliced unpeeled zucchini|
|2 (2.5 oz each) pkg lean pastrami|
|1 (15 oz) can chunky tomato sauce|
|1 ½ tsp. Italian seasoning|
|¼ c. grated reduced-fat Parmesan cheese|
|2 c. hot cooked rotini pasta, rinsed and drained|
- In a large skillet sprayed with olive oil-flavored cooking spray, saute zucchini and pastrami for 5 minutes or until lightly browned.
- Add tomato sauce and Italian seasoning. Mix well to combine.
- Stir in Parmesan cheese and rotini pasta. Reduce heat. Simmer 10 minutes or until mixture is heated through, stirring occasionally.
