    2 ripe avocados, pitted and peeled
    1 clove(s) garlic, minced
    ⅓ c. fresh cilantro, loosely packed
    2 tbsp. fresh lemon juice
    ½ tsp. Hy-Vee salt
    ¼ tsp. Hy-Vee ground black pepper
    Water, as needed
    4 scoop(s) Regular Girl
    1 c. cherry tomatoes, halved, for serving
    Shredded Parmesan cheese, for serving

    Directions

    1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add spiralized zucchini and cook until softened, about 7 to 10 minutes. Remove from pan; keep warm. Drain any excess water.

    2. In a blender, add avocados, garlic, cilantro, lemon juice, remaining 2 tablespoons olive oil, salt, pepper, water, and Regular Girl; blend until creamy. Add additional water until desired consistency is reached.

    3. Add sauce to zucchini and toss. Top with tomatoes and cheese, if desired.
