½ c. water
1 head(s) Belgian endive, cut into 1/4-inch rounds
1 bunch(es) dandelion greens, stemmed
1 tsp. sesame oil
2 tsp. brown rice vinegar
salt
1 firm Fuji apple, cored and cubed
2 tsp. chopped toasted walnuts

Directions

  1. Bring water to a boil in a medium saucepan. Reduce heat to low. Add endive. Cook for 2 minutes.
  2. Add dandelion leaves and cook, tossing gently until wilted, for 3 to 5 minutes. Strain endive and dandelion leaves into a medium bowl. Refrigerate until cool, about 30 minutes.
  3. Combine oil, vinegar and salt in a small jar. Shake until mixed.
  4. Toss greens with dressing and apple cubes. Garnish with walnuts.
