1 (8 oz) can That's Smart pineapple tidbits
½ c. light sour cream
½ c. Hy-Vee light whipped topping, thawed
2 tbsp. Hy-Vee sugar
1 tsp. Hy-Vee ground cinnamon
1 tbsp. Hy-Vee lemon juice
2 c. cooked wild rice
2 medium green apples, diced
2 medium red apples, diced
1 ½ c. red grapes, halved
1 celery rib, thinly sliced

Directions

  1. Drain pineapple, reserving 1 tablespoon juice. Set pineapple aside.
  2. Combine the sour cream, whipped topping, sugar, cinnamon, lemon juice and reserved pineapple juice in a small bowl.
  3. Combine the rice, apples, grapes, celery and pineapple in a large bowl. Add the dressing and stir to coat.
  4. Cover and refrigerate for 2 hours.
