    1 c. water
    ¾ c. sugar, plus additional for sweetening
    1 c. thinly sliced fresh basil
    12 c. cubed and seeded watermelon
    1 c. fresh lemon juice, from 5 to 6 lemons
    Fresh watermelon slices and basil sprigs, for serving

    Directions

    1. To make watermelon simple syrup, bring water and sugar to a boil in a small saucepan. Reduce heat, and simmer for 5 minutes or until sugar dissolves. Remove from heat and stir in the basil. Refrigerate for 1 hour. Strain through a sieve over a bowl, and discard basil.
    2. Blend watermelon in a blender until smooth.
    3. Pour watermelon puree through a fine sieve into a large bowl. Reserve liquid; discard solids. Combine watermelon liquid, basil simple syrup and lemon juice in a pitcher over ice; chill. Adjust sweetness to taste.
    4. Garnish with fresh watermelon slices and basil sprigs before serving.
