Watermelon and Heirloom Tomato Chicken Salad
This is what we mean by easy-breezy summer nights. Pick up a rotisserie chicken to pair with ripe heirloom tomatoes, crumbled cheese, and juicy watermelon. Dinner is done.
Servings and Ingredients
|2 large heirloom tomatoes, thinly sliced|
|8 c. cubed seedless watermelon|
|1 c. grape tomatoes, halved|
|2 c. cubed rotisserie chicken breast|
|¼ c. crumbled Hy-Vee goat cheese|
|¼ c. Hy-Vee Select balsamic glaze|
|Hy-Vee salt and cracked black pepper, to taste|
|Chopped fresh tarragon, for garnish|
- Arrange tomato slices on each of four dinner plates. Top with watermelon, grape tomatoes and chicken. Sprinkle with goat cheese and drizzle with balsamic glaze. Season to taste with salt and pepper. If desired, garnish with tarragon.
