2 medium red onions, thinly sliced and separated into rings (2 cups)
¾ c. seasoned rice vinegar
¼ c. Hy-Vee granulated sugar

Directions

  1. Place onions in a medium glass or stainless steel bowl; set aside.

  2. Bring rice vinegar and sugar to boil in a small saucepan over medium heat. Simmer, uncovered, for 2 to 3 minutes or just until sugar is dissolved.

  3. Pour hot vinegar mixture over onions in bowl. Cover with plastic wrap and let stand at room temperature for 10 minutes or until softened. Then refrigerate for at least 8 hours before serving. For longer storage, store in a covered storage container up to 5 days.
