Description

Curly fries get reinvented with spiralized golden beets, sweet potatoes, red beets and russet potatoes. Fry or bake batches of cut veggies and season to taste with salt and pepper or use your favorite seasoning blend.

1 large golden beet, peeled and ends trimmed
1 large red beet, peeled and ends trimmed
1 large russet potato, peeled and ends trimmed
1 large sweet potato, peeled and ends trimmed
Hy-Vee salt and black pepper, to taste

    Directions

    1. In a deep-fryer or large heavy saucepan suitable for deep-frying, heat oil to 365 degrees. Follow instructions for quantity of oil for deep fryer. For heavy saucepan, fill with at least 2 inches of oil.
    2. Attach the spiralizer blade for making thick, round noodles similar to fettuccine or thin, round noodles similar to spaghetti. Spiralize beets and potatoes.
    3. Working in batches, add vegetables to hot oil. Fry until golden brown, about 1 to 2 minutes. Remove with a slotted spoon, setting on paper towels to drain. Season to taste with salt and pepper.

    4. *For a healthier version, preheat oven to 400 degrees. Line baking sheet with parchment paper. Toss spiralized vegetables with 2 teaspoons olive oil and bake 23 to 25 minutes, tossing halfway through, or until golden and tender. (These nutrition facts follow.)
