⅓ c. uncooked sorghum
2 ¼ c. water
⅓ c. uncooked wheat berries
¼ tsp. Hy-Vee salt
6 c. mixed salad greens
1 ½ c. sliced strawberries
1 c. crumbled blue cheese (4 oz)
1 c. chopped Hy-Vee English walnuts, toasted
Balsamic dressing, optional

Directions

  1. Rinse sorghum; place in a large saucepan. Add water, wheat berries and salt. Bring to boiling; reduce heat. Simmer, covered, for 50 to 60 minutes or until grains are tender. Drain any remaining liquid; set aside.
  2. Line four dinner plates with salad greens. Top with prepared grains, strawberries, blue cheese and walnuts. Drizzle with balsamic dressing, if desired.
