Spread one side of each bread slice with 1/2 tablespoon vegan butter. Sandwich buttered sides together and place on a microwave-safe plate. Add 2 slices of cheese to the top slice of unbuttered bread. Microwave 20 to 30 seconds, or until cheese begins to melt.

- Medium skillet
Heat a medium skillet over medium-low heat. Place cheese-topped bread slice, buttered side down, onto preheated skillet. Top with remaining slice of bread, buttered side up. Cook for 4 to 5 minutes, flipping once halfway through, until bread is golden brown and cheese has melted.
Remove sandwich from skillet and cut in half. Serve immediately.
