    1medium cucumber, peeled, seeded and chopped
    1(6 oz) container Hy-Vee low-fat plain yogurt
    2 tsp.chopped fresh mint leaves
    1 ½ tsp.Hy-Vee Select olive oil
    1clove garlic, minced
    2 tsp.fresh lemon juice
    Hy-Vee salt and freshly ground Hy-Vee black pepper, optional

    Directions

    1. In a nonreactive bowl, mix together cucumber, yogurt, mint, olive oil, garlic and lemon juice. Season with salt and pepper, if desired. Blend well. Cover and chill until ready to serve.
