    6 small sweet potatoes
    1 (8 oz) pkg Hy-Vee light cream cheese, softened
    ¼ c. Hy-Vee packed brown sugar
    1 tbsp. Hy-Vee vanilla extract
    ¾ tsp. Hy-Vee salt
    ½ tsp. Hy-Vee pepper
    ¼ c. Hy-Vee chopped pecans

    Directions

    1. Preheat oven to 400 degrees.
    2. Place sweet potatoes on a baking sheet. Bake for 1 hour or until soft.
    3. Meanwhile, in a large bowl, combine cream cheese, brown sugar, vanilla, salt and pepper.
    4. Cut sweet potatoes in half lengthwise. Carefully scoop pulp into a bowl leaving skins intact.
    5. Mash pulp and stir in cream cheese mixture. Mix well. Spoon sweet potato mixture into empty skins. Sprinkle each with 1 teaspoon chopped pecans.
    6. Bake at 400 degrees for 5 minutes. Broil for 2 minutes.
    7. Serve immediately.
