4 large tortillas (wheat, spinach or tomato) | ||
¼ c. fresh salsa, divided | ||
¼ c. Just 2 Good ranch dressing, divided | ||
fresh spinach leaves | ||
4 slice(s) turkey lunchmeat, divided | ||
4 tsp. chopped red onion, divided | ||
4 tsp. chopped red bell pepper, divided | ||
4 tsp. chopped zucchini, divided | ||
1 c. shredded mozzarella cheese, divided |
Directions
- Place the tortillas on a flat surface. Spread each tortilla with 1 tablespoon salsa and 1 tablespoon ranch dressing.
- On each tortilla, layer several spinach leaves, 1 slice of turkey, 1 teaspoon bell pepper, 1 teaspoon onion, leaving 1-inch of tortilla edges empty of ingredients. Gently press down. Add 1 teaspoon zucchini and sprinkle 1/4 cup of cheese.
- Roll once, fold in edges, continue rolling. Should look like an egg roll when done.
