Directions
Heat a 9- to 10-in. skillet over medium-low heat. When hot, remove skillet from heat and spray with cooking spray; quickly return to heat.
Stir batter if separated. Slightly lift skillet from heat and pour in 3 to 4 Tbsp. of batter, tilting and rotating skillet to spread batter evenly. Return to heat and cook about 1 to 2 minutes or until top is almost dry and edges begin to brown.
Loosen crêpe from pan with a spatula; carefully turn crêpe over. Cook about 15 to 30 seconds more or until lightly browned.
Remove from skillet. Repeat making additional crêpes using remaining batter and spraying skillet with cooking spray as needed.*
To serve, spread a thin layer of pesto on each crêpe; layer each with turkey, cheese and tomatoes. Fold crêpe in half, then in half again to form a triangle. Serve warm.
*Note: Place crêpes on a paper-towel-lined baking sheet to keep warm in a 200°F oven while cooking remaining crêpes.
