    2 tbsp. Hy-Vee Select olive oil
    1 ½ lbs. turkey breast cutlets
    8 oz. sliced baby portabella mushrooms
    1 yellow onion, chopped
    2 (14.5 oz each) cans Hy-Vee Italian style diced tomatoes, drained

    Directions

    1. Heat oil in a large, deep skillet or Dutch oven and add turkey. Cook over medium-high heat for 4 minutes on each side. Remove turkey and set aside.
    2. Add mushrooms and onions to pan and cook for 4 minutes. Stir in tomatoes and place turkey back into pan. Reduce heat to medium, cover and simmer for 15 minutes.
