    Escape to the tropics during the winter months with our version of a hot toddy, featuring coconut rum and garnished with fresh pineapple.

    14 oz. warm water (120 degrees to 140 degrees), divided
    2 oz. Malibu Caribbean rum with coconut liqueur
    1 tsp. fresh lime juice
    ½ tsp. Good Graces gluten-free organic coconut sugar
    1 star anise
    1 thin fresh pineapple slice, for garnish

    • 1 (10-oz.) heatproof glass or mug
    • Cocktail stirrer or spoon

    Directions

    1. Fill 1 (10-oz.) heatproof glass or mug with 8 oz. warm water; let stand for 1 minute. Remove and discard water.

    2. Add rum, lime juice, coconut sugar and star anise to warmed glass. Add remaining 6 oz. warm water; stir until coconut sugar dissolves. Garnish with a pineapple slice, if desired.
