    1 tsp.lemon zest, plus additional for garnish
    2 tsp.fresh lemon juice
    1 tbsp.kiwi, finely chopped
    1 tbsp.fresh pineapple, finely chopped
    1 tbsp.fresh mango, finely chopped
    2 tbsp.Hy-Vee graham crackers, crushed and divided
    2 tbsp.Hy-Vee unsweetened coconut flakes, toasted and divided
    Whipped cream, for garnish

    Directions

    1. Combine yogurt, lemon zest, and lemon juice in a small bowl. Spoon half of the yogurt into a 2 pint glass jar; set aside. Combine chopped kiwi, pineapple, and mango in a separate small bowl.

    2. Layer half of the graham cracker crumbs, fruit mixture, and toasted coconut flakes on top of the yogurt. Repeat layers. If desired, top with a dollop of whipped cream and additional lemon zest.
