¼head radicchio, shredded
1 c.jicama, peeled and thinly sliced
½navel orange, peeled and thinly sliced
1 tbsp.fresh lime juice
¼avocado, peeled, seeded and thinly sliced
2 tbsp.pepitas , (roasted pumpkin seeds)
2 tbsp.pomegranate seeds

Directions

  1. Wash and dry romaine in a salad spinner.
  2. Combine the romaine, radicchio, jicama and orange in a large bowl. Squeeze lime juice over top of salad and toss to coat. Serve with avocado, pepitas and pomegranate seeds for topping.
