    1 tbsp. ground flaxseed
    3 tbsp. water
    ½ c. Hy-Vee unsalted butter, at room temperature
    ½ c. firmly packed Hy-Vee light brown sugar
    1 tsp. Hy-Vee vanilla extract
    1 ½ c. Hy-Vee old-fashioned oats
    ½ c. plus 2 tbsp white whole wheat flour
    ½ tsp. Hy-Vee baking soda
    ¼ tsp. kosher salt
    ½ c. Hy-Vee flaked coconut
    1 c. dark chocolate chips
    1 (2 oz) package Hy-Vee slivered almonds
    ½ c. Hy-Vee dried cranberries

    Directions

    1. In a small bowl, mix together flaxseed and water; set aside.
    2. Beat butter and brown sugar until light and fluffy. Beat in flaxseed mixture and vanilla. Whisk together oats, flour, baking soda and salt; stir into mixture. Fold in coconut, chocolate chips, almonds and cranberries.
    3. Form into 1 inch balls. Place 2 inches apart on ungreased baking sheets and flatten slightly. Bake at 375 degrees for 10 minutes or until golden brown. Allow to cool on baking sheet for 2 minutes before removing to wire rack.
