Traditional Oat and Raisin Cookies

|1 c. Hy-Vee shortening|
|1 c. Hy-Vee granulated sugar|
|1 c. packed Hy-Vee brown sugar|
|2 Hy-Vee large eggs|
|1 tsp. Hy-Vee vanilla extract|
|1 ½ c. Hy-Vee all-purpose flour|
|1 tsp. Hy-Vee baking soda|
|1 tsp. Hy-Vee ground cinnamon|
|¼ tsp. ground nutmeg|
|1 tsp. Hy-Vee salt, optional|
|3 c. Hy-Vee old fashioned oats|
|1 c. Hy-Vee raisins|
- Preheat oven to 350 degrees. Lightly grease cookie sheet; set aside.
- Beat shortening and sugars until creamy. Add eggs and vanilla; beat well.
- Combine flour, baking soda, cinnamon, nutmeg and 1 tsp salt, if desired, mix well. Add to shortening mixture, mix well. Stir in oats and raisins, mix well. Drop by rounded teaspoonfuls onto prepared cookie sheet.
- Bake 10 to 12 minutes or until lightly golden brown. Let stand 1 minute before removing to racks to cool.
