    2 tbsp. pine nuts, toasted, divided

    Directions

    1. Preheat oven to 350 degrees.
    2. Place mahi mahi fillets in an 11-by-7-inch baking dish. Squeeze lemon juice over fillets and season with salt and pepper.

    3. Bake 5 minutes. Turn fillets and bake an additional 5 minutes or until fish flakes easily with fork.

    4. Serve topped with pesto and pine nuts.
