    ¼ c. diced red onion
    1 mango, peeled, pitted and diced
    1 orange, peeled, sectioned and diced
    ¼ c. coarsely chopped cilantro
    ¼ c. lime juice
    1 tbsp. Hy-Vee canola oil
    1 lbs. tilapia
    12 (6-inch) Hy-Vee corn tortillas

    Directions

    1. Prepare the salsa by mixing red onion, mango, orange, cilantro and lime juice together. Set aside.
    2. Heat oil in a large skillet over medium heat. Add the tilapia and cook until the flesh is opaque, about 3 to 4 minutes on each side.
    3. Meanwhile, heat the tortillas in microwave for 90 seconds on HIGH.
    4. Shred cooked tilapia into bite-size pieces.
    5. Divide shredded tilapia among the warmed tortillas. Top each with salsa. Serve immediately.
