1 mango, peeled, pitted and diced | ||
1 orange, peeled, sectioned and diced | ||
¼ c. coarsely chopped cilantro | ||
¼ c. lime juice | ||
1 tbsp. Hy-Vee canola oil | ||
1 lbs. tilapia | ||
12 (6-inch) Hy-Vee corn tortillas |
Directions
- Prepare the salsa by mixing red onion, mango, orange, cilantro and lime juice together. Set aside.
- Heat oil in a large skillet over medium heat. Add the tilapia and cook until the flesh is opaque, about 3 to 4 minutes on each side.
- Meanwhile, heat the tortillas in microwave for 90 seconds on HIGH.
- Shred cooked tilapia into bite-size pieces.
- Divide shredded tilapia among the warmed tortillas. Top each with salsa. Serve immediately.
