    1/2 to 3/4 c. tart cherry jam
    ½ tsp.finely minced fresh thyme
    3 oz.pancetta, sliced into 8 slices
    2 tbsp.butter
    4unglazed plain cake donuts, cut in half
    12 oz.triple crème brie, sliced
    12 oz.thinly sliced smoked black forest ham
    8very thin green apple slices

    Directions

    1. Combine jam and thyme in a small bowl; set aside.
    2. Heat a skillet or sauté pan over medium heat. Add 8 pancetta slices and cook until crispy. Remove from pan, reserving pancetta grease and drain on a paper towel lined place.
    3. Melt butter in the pan and add 4 donut halves, cut side down. Top each donut half with 1/8 of Brie slices, ¼ of the smoked black forest ham, 2 green apple slices, 1 to 2 tablespoons cherry jam, 2 slices crispy pancetta, another 1/8 of Brie slices, and top half of donut (flat side up). Grill until donut is golden and cheese is melted, turning once during grilling.
    4. If the pan is oven safe, place the pan in a 375-degree oven to heat through, if desired.
