½ c.tapioca flour, such as EnerG
½ c.cornstarch
¼ c.potato starch flour, such as EnerG, or potato flour
1 c.sweet rice flour, such as EnerG, plus additional as needed
2 tsp.xanthan gum
½ tsp.salt
½ c.margarine, such as Smart Balance, at room temperature
½ c.butter-flavor Crisco shortening
2eggs, cold
1 tbsp.gluten-free apple cider vinegar, such as Heinz
4 tbsp.cold ice water

Directions

  1. Combine all ingredients. Add additional rice flour if sticky. Chill for 15 to 20 minutes before rolling.
  2. Note: Tapioca starch is the same as tapioca flour. Potato starch is not the same as potato flour.
