½ c. tapioca flour, such as EnerG
½ c. cornstarch
¼ c. potato starch flour, such as EnerG, or potato flour
1 c. sweet rice flour, such as EnerG, plus additional as needed
2 tsp. xanthan gum
½ tsp. salt
½ c. margarine, such as Smart Balance, at room temperature
½ c. butter-flavor Crisco shortening
2 eggs, cold
1 tbsp. gluten-free apple cider vinegar, such as Heinz
4 tbsp. cold ice water

Directions

  1. Combine all ingredients. Add additional rice flour if sticky. Chill for 15 to 20 minutes before rolling.
  2. Note: Tapioca starch is the same as tapioca flour. Potato starch is not the same as potato flour.
