1yellow onion, chopped
3medium carrots, sliced
3large stalks celery, sliced
1 tbsp.That's Smart! dried parsley flakes
6 c.That’s Smart! chicken broth
2 c.water
1(12-oz.) pkg. That’s Smart! extra-wide egg noodles
That’s Smart! saltine crackers , or That’s Smart oyster crackers, for serving

Directions

  1. Heat olive oil in a large stockpot over medium-low heat. Season chicken with salt and pepper. Cook chicken breasts until golden brown, about 10 to 15 minutes. Stir in onion, carrots, celery, and parsley flakes. Cook 5 minutes, covered, or until vegetables have softened slightly.

  2. Add chicken broth and water to stockpot; increase heat to medium-high. Cover and bring to a boil. Boil 5 minutes or until vegetables are tender and chicken has cooked through (165 degrees). Remove chicken from stockpot and allow to rest while noodles cook.

  3. Reduce heat to medium-low. Add egg noodles to stockpot. Cook, covered, 5 to 7 minutes or until al dente. Cut chicken into bite-size pieces and add to stockpot. Heat through 2 minutes. Remove soup from heat; season with salt and pepper. Serve with saltine crackers or oyster crackers, if desired.
