Directions
Add chicken broth and water to stockpot; increase heat to medium-high. Cover and bring to a boil. Boil 5 minutes or until vegetables are tender and chicken has cooked through (165 degrees). Remove chicken from stockpot and allow to rest while noodles cook.
Reduce heat to medium-low. Add egg noodles to stockpot. Cook, covered, 5 to 7 minutes or until al dente. Cut chicken into bite-size pieces and add to stockpot. Heat through 2 minutes. Remove soup from heat; season with salt and pepper. Serve with saltine crackers or oyster crackers, if desired.
