Add olive oil to a large skillet over medium-high heat. Add onion; cook 2 to 3 minutes or until slightly softened. Add ground beef; sprinkle with Italian seasoning. Cook, breaking up large pieces until cooked through (165 degrees). Stir in cream cheese; cook until melted and well combined. Stir in cottage cheese and remove from heat.
Place 4 lasagna noodles on the bottom of prepared baking pan. Top with 1 cup pasta sauce, 2 cups ground beef mixture, and 2/3 cup mozzarella cheese. Repeat to create 3 layers. Top lasagna with remaining mozzarella cheese and Parmesan cheese. Cover with aluminum foil sprayed with nonstick spray.
Bake, covered, 45 to 55 minutes. During the last 5 minutes of baking, remove aluminum foil. Bake until cheese is melted and slightly browned and sauce is bubbly. Remove from oven and allow to cool 10 minutes before serving.
