Description

1 tbsp. Thai red curry paste
8 oz. cod fillet, cubed

Directions

  1. Combine condensed tomato soup, coconut milk, and Thai red curry paste in a saucepan. Bring to a simmer.

  2. Add cubed cod to saucepan. Cook, covered, over medium-low heat for 2 to 3 minutes or until fish flakes easily with a fork (145 degrees). Garnish with additional coconut milk, if desired.
