Heat olive oil in a large skillet. Stir-fry broccoli and carrots for 2 minutes. Add fajita vegetables, snow peas, and water chestnuts. Stir-fry for 5 minutes more or until veggies are crisp-tender. Add stir-fry sauce and heat through.
Vegetarian stir-fry has never been this easy. Why? Maybe because it comes together in just one skillet, or maybe because it only takes 20 minutes to make.

Heat cauliflower in the microwave according to package directions. Serve cauliflower rice topped with vegetables. Sprinkle with cashews, if desired.
