    1 cucumber, thinly sliced
    2 carrots, thinly sliced
    Rice, for serving
    Fresh green onions, for serving
    Hy-Vee crushed red peppers, for garnish
    White sesame seeds, for garnish

    Directions

    1. Place carrots and cucumbers in a large glass jar; top with seasoned rice vinegar. Cover; set aside shaking occasionally.

    2. Heat a large skillet over medium-high heat. Add ground beef, stirring occasionally to break up large pieces. Continue cooking until beef is brown and reaches 165 degrees. Drain excess fat, if desired. Stir in sesame teriyaki sauce; warm through.

    3. To serve, drain cucumbers and carrots; discard vinegar. Top hot cooked white rice with beef mixture, carrots, and cucumber. If desired, garnish with green onions, crushed red pepper, and sesame seeds.
