Taco Veggie Pizza

2 whole grain tortillas | ||
1 tsp. olive oil, divided | ||
1 (17 oz) container plain Greek yogurt | ||
1 packet(s) reduced-sodium taco seasoning | ||
1 tomato, chopped, divided | ||
1 c. chopped broccoli, divided | ||
1 c. shredded lettuce, divided | ||
¼ c. shredded taco cheese, divided | ||
¼ c. taco sauce or salsa, optional |
Directions
- Preheat oven to 350 degrees.
- Place two tortillas on baking sheet. Drizzle oil on both tortillas. Bake for 5 to 10 minutes or until crisp.
- Mix together yogurt and taco seasoning. Spread onto tortillas.
- Top with vegetables, cheese and taco sauce.
