    4 large portabella mushrooms tops, stemmed
    ¼ tsp. Hy-Vee garlic powder
    ¼ tsp. Hy-Vee black pepper
    3 c. spinach
    ⅔ c. Hy-Vee finely shredded Swiss cheese
    4 kaiser rolls

    Directions

    1. Preheat oven to 400 degrees.
    2. Place a cooling rack on top of a baking sheet and set mushrooms on it. Sprinkle garlic powder and black pepper evenly over the mushrooms.
    3. Bake mushrooms for 5 minutes, then flip mushrooms and bake for 5 more minutes.
    4. Meanwhile, cook spinach over medium heat in a small saucepan until lightly wilted, about 3 minutes.
    5. Split rolls and top each bottom half with a mushroom, one-fourth the cheese, one-fourth the spinach and top half of the roll. Serve immediately.
