Sweet Potato Baked Beans

1 (40 oz) can sweet potatoes, drained and mashed | ||
1 ½ c. Hy-Vee vegetarian baked beans | ||
¼ c. Hy-Vee orange juice | ||
5 tbsp. Hy-Vee butter, melted and divided | ||
1 tsp. Hy-Vee salt | ||
3 whole Hy-Vee honey graham crackers, finely crushed | ||
2 tbsp. packed Hy-Vee brown sugar |
Directions
- Preheat oven to 350 degrees.
- Mix potatoes, beans, orange juice, 2 tablespoons of butter and salt in a large bowl. Pour into a greased 8-by-8-inch baking dish.
- Combine graham crackers, remaining butter and brown sugar. Sprinkle on top of potato mixture.
- Bake until top is golden brown, approximately 30 minutes.
