Sweet Potato Bake
Servings and Ingredients
|2 large sweet potatoes, peeled, cubed|
|3 Hy-Vee organic eggs, beaten|
|¼ c. plus 2 tbsp Organic Valley butter, melted, divided|
|⅔ c. Hy-Vee vanilla soymilk|
|¾ c. packed brown sugar, divided|
|¾ c. chopped pecans|
|½ c. flake coconut|
|¼ c. flour|
|1 ½ tsp. pumpkin pie spice|
- Preheat oven to 350 degrees. Boil sweet potatoes about 25 minutes or until tender. Drain well and mash.
- Stir in eggs, 1/4 cup butter, soymilk and 1/4 cup brown sugar. Pour into a greased 2-quart baking dish.
- Stir together remaining ingredients, including remaining butter. Sprinkle evenly over sweet potatoes. Bake uncovered for 40 minutes or until center is set.
