2 large sweet potatoes, peeled, cubed
3 Hy-Vee organic eggs, beaten
¼ c. plus 2 tbsp Organic Valley butter, melted, divided
⅔ c. Hy-Vee vanilla soymilk
¾ c. packed brown sugar, divided
¾ c. chopped pecans
½ c. flake coconut
¼ c. flour
1 ½ tsp. pumpkin pie spice

Directions

  1. Preheat oven to 350 degrees. Boil sweet potatoes about 25 minutes or until tender. Drain well and mash.
  2. Stir in eggs, 1/4 cup butter, soymilk and 1/4 cup brown sugar. Pour into a greased 2-quart baking dish.
  3. Stir together remaining ingredients, including remaining butter. Sprinkle evenly over sweet potatoes. Bake uncovered for 40 minutes or until center is set.
