6 fresh yams
2 (8 oz each) cans Hy-Vee pineapple tidbits, with juice
½ (12 oz) pkg Ocean Spray™ cranberries
½ tsp. ground cinnamon
¼ c. brown sugar
1 ⅔ c. Hy-Vee miniature marshmallows

Directions

  1. Preheat oven to 350 degrees.
  2. Peel yams. Cook in a large pot of water until fork-tender. Drain and cool slightly. Cut into yams into 1-inch cubes and place in a 9-by-13-inch baking dish.
  3. Stir pineapple, cranberries, cinnamon and brown sugar into the casserole dish.*
  4. Bake uncovered for 35 to 40 minutes at 350 degrees.
  5. Sprinkle marshmallows over the casserole. Bake an additional 10 minutes or until marshmallows are golden brown.
  6. *If desired, cover and refrigerate overnight. Increase the baking time to 50 minutes, and then bake an additional 10 minutes after the marshmallows are added.
