Meanwhile, gently break off sides from 3 waffle bowls; set bottoms aside. Break bowl sides and remaining 2 waffle bowls into large pieces; set aside.
Remove and discard tops from 4 strawberries; cut strawberries into 1/4-in.-thick slices and set aside. Remove ice cream slices from freezer; place each on a reserved waffle bowl bottom. Spread 1 Tbsp. chocolate sauce onto each of 2 ice cream slices; arrange sliced strawberries on top.
To assemble, stack chocolate-covered ice cream slices in the center of a serving platter. Top with a waffle bowl bottom. Repeat layers with remaining chocolate-covered ice cream slice and waffle bowl bottom. Place remaining ice cream slice on top. Garnish with additional strawberries, whipped topping and chocolate sauce, if desired. Serve with broken waffle bowl pieces.
